INTERNORGA 2019: OUT-OF-HOME FOOD TRENDS
INTERNORGA, Europe’s leading trade show for foodservice and hospitality, presented the latest out-of-home food trends in their FoodZoom survey. Here is our summary of the most exciting insights:
- Street Food Transfer: From the street to the starred restaurant.
Snacking is changing the out-of-home market and requires new concepts to meet the consumer’s needs. This is clearly illustrated by the example of street food, which has already found its way even into quality restaurants. Snacking as a new consumption occasion opens up new sales opportunities for caterers. At the same time, the creative and individual interpretations of the small but fine in-between-meal meet the guests’ desire for exotic dishes from faraway countries, which opens up new opportunities for gastronomes to make their mark.
- Food (-Service) 4.0: With digital solutions for differentiation and more turnover.
Digitalisation is penetrating the out of home market. Requirements for long-term successful business models and also opportunities for caterers are increasing.
- The “INSTAGRAMABILITY of food has become an important criterion for guest satisfaction. In order to stand out from the competition, some restaurants now offer dishes that are prepared and styled especially with regard to social media suitability.
- In the area of home delivery service, consumers would like to be able to order meals conveniently online or by app. In addition, live tracking of online orders is already standard for some food delivery providers. All in all, the restaurateur must become even more digital in his communication with the guest beyond the option of online reservations and online rating which are now standard.
- Collected data provides precious insights and helps to create an offer perfectly tailored to customers’ needs
- Smart monitoring and process controlling help players in the market to increase efficiency for example of their power supply
- Back2Nature:
More and more guests are longing for real, natural experiences and will pay increasing attention to “green aspects” when choosing restaurants. Restaurants integrate regional and fresh products into their concepts and design the guest rooms in a natural look, for example by wall greening. Herb and salad beds are often integrated directly into the room concept, for example by indoor vertical farming.
- “Green and Healthy”:
Although in Germany only 6% describe themselves as vegetarians (BMEL), the trend for plant-based nutrition is gaining in importance. The term “PLANTARISM” combines all diets with an overall stronger focus on plant-based food – not just strictly vegetarian or vegan diets. Caterers can make use of the increasing importance of plant-based diets by offering new recipes and preparation methods like hot smoothies and international bowls & soups. New vegetable ingredients like cubio, yuzu, jackfruit, or water yam provide for variety and a unique positioning.
Consumers increasingly investigate what they are actually eating and wish for high-quality products. Products with reduced sugar or fat content as well as free-from-products fit this enlightened health consciousness.
- Other food trends: fermentation, ice cream, tea
Besides the rediscovered traditional preparation method of fermentation, new ice cream creations for example shaved ice cream and tea are becoming more and more popular. The latter is increasingly competing with coffee and will as well be used as a spice. Some interesting and trending examples are:
- KIMCHI: fermented Chinese cabbage with chili paste
- MIZUDASHI: cold brew green tea
- PATBINGSU: scraped ice cream with condensed milk and azuki bean paste
